Healthy Chicken Tortilla Soup

This simple, thrown together, healthy chicken tortilla soup  has become a staple in my house.  It is quick and easy to make after a long day at work.  It is also comforting and warming on cold winter evenings when you are looking for something that is not high in calories.

This chicken tortilla soup contains only healthy, beautifying ingredients.

You will need:

1 lb. of chicken breast (cut into small chunks)

1 lb of chopped chicken breast

1 – 14 oz can of chicken broth

16 ounces of water

1 15.5 ox can of great northern beans

1 10 oz can of rotel (diced tomatoes and green chilies)

approximately 6 oz of medium mexican salsa (containing jalapeno’s if you like it hotter)

Cover and simmer on medium heat for 30 minutes

Serve with a handful of crunchy tortilla chips
