Fresh Tomato and Shrimp Linguine

Fresh Tomato and Shrimp Linguine Recipe that has become popular with my friends and family.

Picking fresh vegetables from the garden and preparing a healthy dinner is one of life’s simple pleasures.  Making a satisfying dish with simple ingredients that pleases your company can be a way to show that you care without spending a large amount of money.  One of my favorite recipes using fresh garden tomatoes is quick, simple and healthy. This savory dish can be prepared in minutes with minimal effort.

4 fresh tomatoes, chopped

about 15 medium shrimp, tails cut off and deveined (I often substitute chicken)

1 clove of garlic, chopped finely

1 teaspoon of fresh basil (preffered) or dried basil, chopped

1/2 teaspoon of sea salt

2 Tablespoons of olive oil

1 8oz box of whole wheat linguine or any other whole wheat pasta

Add the olive oil to a pan on medium heat, add the tomatoes, garlic, basil, half of the olive oil and  salt.  Cook for 5 minutes, do not overcook the tomatoes.  Add the shrimp and cook until they become pink about 3 minutes.

Serve on a bed of linguine cooked and then tossed with the remaining olive oil and sea salt with a small amount of parmesan cheese grated on top (optional)

Serve with a tossed Italian salt
